Connie Kathleen Eckhoff Grant was born on July 2, 1947 in the Wesley Hospital in Wadena, Minnesota. Her parents were the late Ernest and Alice (Barden) Eckhoff. Connie was baptized and confirmed at Trinity Lutheran Church in Deer Creek. She grew up and attended school in Deer Creek, graduating with the Class of 1965. Connie continued her education at Bemidji State, with a bachelor’s degree in education.
On June 5, 1971, Connie was married to Jackson Grant and during their marriage was blessed with their daughter Aline. Connie traveled overseas with her family and was a teacher in Okinawa, Texas, North Carolina, and Minnesota; including Reemer and Deer Creek. She was very proud to teach a variety of students from preschool to college-age in school, military and college settings.
Connie was a very giving person, sharing her stories and loved reminiscing with family and friends. She enjoyed gardening, playing games, puzzles, trivia and cooking. Connie truly enjoyed teaching and she had a special place in her heart for all children. She was an avid volunteer in the community, was active with the school board, Sunday school teaching, Habitat for Humanity, and the American Legion Auxiliary.
Surrounded by her loving family, Connie was called from this life on Monday, May 23, 2019 at Edgewood Vista in Baxter, at the age of 71. She will be deeply missed by all her family and friends. Preceded in death by her parents; ex-husband Jackson Grant; brother-in-law Don Churchill and sister-in-law Barb Eckhoff.
She will forever be remembered by her daughter, Aline (Trent) Gilb of Brainerd; sister Janiel Churchill of Lake Elsie, ND; brothers: Don (longtime friend, Sue) Eckhoff of Henning; Dean (Gwen) Eckhoff of Deer Creek; Brian (Stacy) Eckhoff of Alliance, Nebraska; Dale Eckhoff of Deer Creek; numerous nieces, nephews, great nieces and nephews, other relatives, many friends and an abundance of students.
